1 1/2 c. brown rice flour
1 tbsp. ground flax seeds
1 tsp. cinnamon
1 tsp. nutmeg
1 tbsp. baking powder
1/2 tsp. sea salt
4 egg
1/2 c. water
1 c. butter
1/2 c. walnuts
1 c. honey, raw
1 1/2 c. spelt flour
1 c. pumpkin puree, canned
Preheat oven to 350°F and grease an 8x8 pan or 2 loaf pans. Mix together melted butter, eggs, honey, pumpkin, and water. In a separate bowl, combine rice flour, spelt flour, baking powder, salt, cinnamon, nutmeg, flax, and chopped walnuts. Add dry ingredients to wet ingredients, and mix just until blended. Pour into prepared pan(s). Bake 1 hour or until toothpick inserted comes out clean.
