Delicious as an alternative to traditional hummus. Good to have on hand for the Thanksgiving meals.
2 tbsp. tahini
2 tbsp. lemon juice
1 tsp. ground cumin
1 tsp. extra virgin olive oil
3/4 tsp. sea salt
1 dsh. cayenne pepper
2 c. pumpkin puree, canned
1 clove garlic
2 tbsp. fresh parsley
1 tbsp. pumpkin seeds
Place tahini, lemon juice, cumin, olive oil, sea salt, cayenne, pumpkin puree, and chopped garlic in a food processor and process until smooth. Chop the parsley, add to the processor and pulse until blended. Spoon into a serving bowl and sprinkle with pumpkin seeds. Serve with fresh veggie crudites and/or rice crackers. Enjoy! (One serving = 3 tablespoons = 1 carb.)
