Mmm... pumpkin oatmeal cookies!
1/4 tsp. sea salt
1 c. old-fashioned oats
3/4 c. oat flour
1 tbsp. pumpkin pie spice
2 tbsp. coconut oil
3/4 c. pumpkin puree, canned
1 tsp. vanilla extract
1/2 c. maple syrup
4 tbsp. chocolate chips
Preheat oven to 325ºF. Line a baking sheet with parchment paper.
Combine oats, oat flour, pumpkin pie spice, and sea salt in a bowl. Whisk together.
In a separate bowl, combine melted coconut oil, pumpkin puree, vanilla extract, and maple syrup. Whisk together until well combined. Add dry mixture, and continue to whisk until fully incorporated. Fold in all but 1 tablespoon of chocolate chips.
Drop cookie dough onto baking sheet by the spoonful, making 12 cookies. These cookies will not spread, so flatten them a bit with your fingers or the back of a spoon to create a true cookie shape. Top the cookies with remaining chocolate chips.
Bake for 13-15 minutes. Let cool for about 10 minutes before removing from baking sheet.
Store in an airtight container in the refrigerator.
