Pumpkin Brownie Bites

Tastes like Starbucks' Pumpkin Loaf bread!


    2/3 c. pumpkin puree, canned

    1 egg

    1 tsp. vanilla extract

    1/4 c. honey, raw

    1/4 c. almond butter

    1/2 c. old-fashioned oats

    1/2 tsp. baking soda

    1/2 tsp. cinnamon

    1/2 tsp. nutmeg

    1/2 tsp. ground cloves

    1/4 tsp. ground ginger

    1/2 c. chocolate chips


Preheat oven to 350°F. Grease an 8x8 baking dish with coconut oil.

Whisk together pumpkin, almond butter, honey, egg, and vanilla in a medium bowl.

Add oats, baking soda, and spices. Continue to mix until all ingredients are well incorporated.

Stir in chocolate chips and/or chopped nuts.

Spread mixture into an even layer in the baking dish. Bake for 25-30 minutes, until a toothpick inserted in the center comes out clean.

Remove from oven and let cool to the touch. Place baking dish in the refrigerator for 30 minutes to an hour. Remove from fridge, cut into 16 pieces, and store in an airtight container. Enjoy!
