Its snack time and Ive got a TON of leftovers... so l put them to use :)... if your a protein type like me then count the avocado as a carb, otherwise its a fat.
1 cilantro, bunch, fresh, organic
1 pinch mild cheddar cheese
2 oz. avocado
6 oz. pork shoulder roast
2 med. lettuce
lay out the lettuce leafs flat and add 2-3 oz of pork on each of them (depending on what your snack size servings should be). Add one oz of avocado to each of them, I like to mash mine up or cut into small pieces. garnish with cilantro and cheese (if you desire) and roll up into a wrap... Ive also added tomatoes and lime juice to these before and it tasted great.
its a great cold snack, easy to pack, and can easily be made into a larger sized meal, great for brown-bagging it too!
