Protein Strawberry Rhubarb Crumble

This is not only a delicious dessert, but because of the protein and carb count can be enjoyed for breakfast by protein metabolism types! How awesome is that?!


    3 c. rhubarb, fresh, organic

    2 tbsp. coconut flour

    3 c. strawberries

    1 c. mixed nuts

    1/2 c. almond flour

    1 c. old-fashioned oats

    4 tbsp. butter

    3 tbsp. almond butter

    1 1/2 tsp. cinnamon

    1 1/2 c. Greek yogurt

    1/2 c. coconut sugar


Preheat oven to 350ºF.

Chop fruit into 1-inch pieces and mix with 1/4 cup of coconut sugar and coconut flour in a deep casserole dish and set aside.

In a large bowl mix the rest of the coconut sugar, almond butter, chopped nuts, cinnamon, oats, butter, and almond flour. The butter and almond butter will cause the mixture to look lumpy, which is fine.

Top fruit with oatmeal mixture. Bake for 30 minutes with lid on. Remove lid and bake for another 30 minutes until topping is nicely browned, but be careful not to let it burn.

Serve hot from the oven with 1/4 cup of Greek yogurt on top of each serving.
