Protein Pancake

165 Calories, 6 g Fat, 14 g Protein, 16 g Carbs, 6 g Fiber. Quick, easy and delicious pancake for one. I usually serve it with a couple of over-easy eggs.


    2 tbsp. ground flax seeds

    2 tbsp. quinoa flour

    1 kg stevia

    1/4 tsp. baking powder

    1/4 tsp. cinnamon

    1/8 tsp. fresh ginger

    1 nutmeg

    1 pinch sea salt

    1 tbsp. milk, raw or organic

    4 tbsp. egg white

    1 vanilla extract

    1 molasses, organic


Mix all dry ingredients together and then add wet ingredients all at once. Mix until lumps are gone. On medium heat, melt 1/2 teas. coconut oil in a small skillet. Add pancake mixture and cook on first side until well bubbled. Turn over and cook another minute or so.
