Protein-Packed Banana Nut Bread

A delicious high-protein, grain-free, guilt-free snack! Easy to carry and easy to eat on-the-go.

Ingredients

    1 1/4 c. almond flour

    1/4 c. coconut flakes

    1/2 tsp. baking soda

    1/2 tsp. baking powder

    4 tsp. cinnamon

    1 c. walnuts

    3 sml. banana

    3 egg

    1 tsp. vanilla extract

Directions

Preheat oven to 375ºF. Generously grease a loaf pan with coconut oil. (I line the bottom with a piece of parchment paper, and grease the top of the paper, too.)

In one bowl, combine the dry ingredients (almond meal, coconut, baking soda, baking powder, cinnamon, and walnuts). In another bowl, mash the bananas. Mix in the other liquid ingredients (eggs and vanilla).

Add wet ingredients to dry ingredients, and mix until everything is combined and there are no lumps.

Pour into the prepared pan. Bake for 30-40 minutes.

Cool 5 minutes in the pan. Remove loaf from the pan and allow to cool completely before slicing.

*I cut my loaf into 10 pieces and wrap each piece individually. They freeze exceptionally well. I take one piece out of the freezer in the morning, and it is ready to eat by snack time.
