Protein and Nut Snack Bars

Home made snacks bars for all the family.


    2 oz. almonds

    2 oz. walnuts

    2 oz. cashews

    2 tbsp. flax seeds

    4 oz. date

    1 scp. Spring of Life Plant-Based Protein Powder, chocolate

    1/4 c. steel cut oats

    2 tsp. honey, raw


Switch the oven on at gas mark 4, 180 centigrade, and grease a baking tray and put baking paper- leave the tray out of the oven but allow the oven to heat up. Heat up a pan/frying pan- do not add any oil. Add the almonds, cashew nuts, walnuts and roast over a low heat, turning regularly- this takes about 5mins depending on the heat. during the last minute add the flax seeds and roast all nuts. move the nuts to a pestle and mortar and beat to the required size- I made mine small as i like the crunchy feeling. Chop up the dates finely or to your desired size, you can use a blender if you like but i used a knife to dices/chop to small pieces. add all nuts and dates to a bowl, add protein power and oates and squeeze 2/3 tea spoons of honey as well - or to your desired taste- you can leave out the honey altogether or use stevia if you prefer. Now mix all the ingredients together Add a little fresh water at a time until the mixture comes together. then take small amount of the mixture and make bar shapes or any other shape you prefer and put on the prepared baking tray. Do this until all the mixture is used. Pop the tray into the heated oven for 8-10 mins. You now have a healthy snack or after exercise protein bar without any nasties which come with the ready made bars! I make small quantities so that the bars are eaten whilst still fresh. Roasting the nuts stops them from going mouldy and, in my opinion, it enhances the taste of the bars as well as improving the aroma.
