My mom sent me this recipe about 5 yrs or so ago. I've tweaked it BD-style and it's what we had for dinner tonight. Oh my gosh, it was even better than I remembered! Hubby & kid tested. :)

Ingredients

    1 1/2 lbs. chicken breast

    2 tbsp. butter

2 tsp. seasoning or spices of your liking

    1/3 c. maple syrup

    2 tbsp. coconut sugar

    1/3 c. pecans

Directions

NOTE -The seasoning of your choice should be creole seasoning for this recipe.

Sprinkle the chicken evenly with the Creole seasoning.

Melt butter (or coconut oil for free) in a large skillet over medium heat. Add chicken breasts, cook 4 minutes on each side or until browned and thoroughly cooked. Remove chicken from pan. Set aside, cover with foil to keep warm.

Add maple syrup and coconut sugar to drippings in the pan, bring to a boil. Stir in pecans; cook 1 minute. Spoon pecan mixture over chicken.

** If you can't find or don't want to use raw or organic butter, you can always use coconut oil for Free or olive oil. Raw honey could also be used instead of the maple syrup, though I myself used the maple syrup.*

I hope that you'll enjoy this as much as my family did tonight. We had roasted asparagus with it and a bit of brown rice.
