Peppers and potatoes make for a delicious, satisfying breakfast side dish!
1 tbsp. coconut oil
1/2 c. white or gold potatoes
1/2 c. bell pepper, any color
Heat coconut oil in a skillet over medium to medium-high heat. Add diced peppers and diced potatoes to the skillet and cook, stirring occasionally, until they've reached desired consistency. Serve warm.
