A great, comforting side dish. Add a cup of this soup to your meal's protein choice for a satisfying, warming comfort meal.
2 c. white or gold potatoes
4 tbsp. butter
1 c. white onion
sea salt & black pepper to taste
1/2 c. milk, raw or organic
In a three quart pot, place diced potatoes, butter, diced onion, sea salt, and pepper. Add enough water to NOT QUITE cover the potatoes. Bring to a boil and cover. Reduce heat to a slow boil and boil for 35 minutes, or until potatoes start falling apart when stirred vigorously. While holding lid on tightly, shake the pan vigorously! Stir and mash larger pieces of potato against the sides of the pot and stir resulting mash back into the soup. It should be very thick. Add the milk and heat back up. Serve.
