Threw this together on a whim, I hope it tastes as good as what I did! This is a great appetizer or side dish to a protein. Its just like bruschetta but without the bread!
1 clove garlic
1 tbsp. onion
2 black olives
1 pinch fresh basil
1 pinch sea salt
1 oz. feta cheese
1 portobello mushrooms
1 c. tomato
Preheat the oven to 350 C. Finely chop the tomatoes, onion, black olives, and garlic. Mix together into a bowl. Stir in the basil, and salt. Put the portobello mushroom on the pan and place the mixture on top. Sprinkle on your favorite raw cheese (for this I used feta) Put it in the oven and let it cook for at least 20 mins (I kept it in as long as I was cooking a turkey sausage on the bbq, roughly 20-25 mins)
Feel free to experiment! Next time Im going to try sprinkling some lemon juice on it as well! Bon Appetite! :)
