Stove top skillet meal in one, simple & delicious!
1/2 pkg. white quinoa
4 pork chop
1 tbsp. coconut oil
1/2 onion
1/2 green bell pepper
1 c. white mushrooms
1 tbsp. garlic
32 oz. vegetable broth
In a large skillet melt coconut oil on high heat, add pork chops and brown on both sides. Add onions & bell peppers & saute. Add garlic, mushrooms, & 1/2 vegetable stock & Simmer for 30 minutes on medium heat. Rinse quinoa and add to skillet with remaining vegetable stock and simmer on low heat for remaining 30 minutes. Chops should be tender and quinoa done. Divide and enjoy!!!
