Pork and Snow Pea Stir Fry

This quick stir fry is as pretty as it is delicious.

Ingredients

    1/2 c. snow peas

    1 tsp. fresh ginger

    1 sml. red bell pepper

    1 pork chop

    1 tbsp. tamari, organic

    3 drp. liquid stevia

    2 tsp. coconut oil

    1 pinch sea salt

    1 green onion

Directions

  1. Thinly slice pork chop and season with Celtic sea salt.
  2. Melt coconut oil over medium-high heat in preheated wok or large saute pan.
  3. Toss pork into pan and begin stirring around for 30 seconds.
  4. Add ginger and continue to toss for 30 seconds more.
  5. Add red pepper slices and snow peas and continue to toss until all pink is gone from pork, approximately 2-3 min. To avoid toughness, do not overcook.
  6. Turn off heat and add tamari, stevia, and green onions to the pan. Stir to combine.
  7. Serve in a pretty bowl, garnish with additional green onion if desired, and enjoy!
