Pistachio Pesto

This is so good!! Great on fish, veggie pasta, or anything really!


    1/2 oz. pistachios, raw, organic

    2 tsp. extra virgin olive oil

    1/2 c. fresh basil

    3 clove garlic

    sea salt & black pepper to taste


Heat oven to broil. Roast garlic in the oven in tin foil for about 5 minutes under the broiler. OR just smash it and sauté in coconut oil for a few minutes until soft, but not brown. In a food processor add the lightly packed fresh basil, pistachios (no shell obviously), olive oil, roasted garlic, and salt and pepper (to taste). Mix it up and you've got pesto! I sautéed mine with some cherry tomatoes in a pan and then put that over tilapia. It was amazing. You can use as one serving, or split into two, because it is very garlicky!
