Pico-De-Salsa!

This recipe resembles more of a pico-de-gallo, but eats like a salsa. I add it to salads, or to spice up my eggs in the morning, or with organic rice or veggie chips. It is great. You can use it in MANY different recipes that are bland and need flavor.

Ingredients

    1 c. apple cider vinegar

    sea salt to taste

    2 tbsp. lime juice

    4 tomato

    1 lrg. onion

    1/2 c. cilantro, bunch, fresh, organic

    1/2 jalapeno pepper

    5 clove garlic

Directions

You may either chop, dice, and mince all the ingredients by hand, or use a food processor. When using a food processor, I will add the onion, cilantro, jalapeño, and garlic and turn on until very finely chopped. I dice my tomatoes by hand, because they get a funny/foamy texture in the food processor. Then I mix all the diced veggies together and add the salt, vinegar, and lime.
****keep in mind these measurements are all approximated. If you want more salsa, you just add more of everything. If you like your salsa mild, seed the jalapeño 1st and do less garlic, if you like it very hot, add more jalapeño, or more garlic (the garlic really spices it up!) Also, the apple cider vinegar measurement is really just to your liking. I like a lot of liquid so I use a little more, if you like less liquid & more veggies, just use less. I also LOVE cilantro. If you don't love the strong flavor of cilantro, you may want to start out with a small amount of cilantro and just taste as you add more until you get it where you like it. That's the glory of this recipe! you really can't mess it up and you can individualize it to your liking. It is my favorite thing to make and add to some of the more "bland" meals.
