I love fresh Pico de Gallo and this is the delicious recipe that I use.
8 roma tomatoes
1 red onion
3 bch. green onion
1 1/2 cilantro, bunch, fresh, organic
1 1/2 tbsp. garlic
1 lime
sea salt to taste
3 serrano pepper
36 tsp. chili paste
Chop and dice the tomatoes, onion, green peppers and put into large mixing bowl. Chop the cilantro trying to remove as much of the stems as possible and put the chopped leaves in the bowl. Add the minced garlic and juice from the limes. Mix up ingredients and salt to tase if you would like. At this point I put part of the salsa in a sealable dish for my family and then add the Serrano peppers and chili paste to what is remaining for myself. The peppers and chili paste will make it quite spicy so you might add small amounts until you get the desired spiciness. Put the finished pico de gallo on top of chicken, steak, hamburger patties, anything that needs a bit of extra flavor. I try to make a fresh batch once a week and it only gets better after it has sat in the fridge for a day or two and the flavors all mix together. I hope you enjoy it as much as I do.
