Quick recipe for pickling beans!
1/2 lbs. green beans
4 stlk. fresh dill weed
1 c. white wine vinegar
1 c. water
1/2 tbsp. peppercorns, black, organic
1/2 tbsp. mustard seed
1/2 tbsp. ground allspice
2 tsp. sea salt
1 tsp. honey, raw
3 jalapeno pepper
2 garlic
Combine vinegar, water, spices, salt, and honey in a small saucepan. Bring to a boil, stirring until salt has dissolved and honey is well incorporated. Remove from heat, and set aside.
Arrange beans in a quart jar. Add dill, hot peppers, and garlic. Pour vinegar mixture into the jar, covering the beans completely. Cover and refrigerate.
The beans only need to sit for a few hours before they're done, but the longer they sit (a few days), the better they'll taste! Beans will stay fresh (in the fridge) for about two weeks.
