A delicious twist on salmon giving it a Caribbean flair. A quick, light, refreshing, and scrumptious dinner - great on those hot summer nights!
sea salt to taste
1 lbs. salmon
3 tbsp. butter
1/2 c. sweet onion
1/2 c. pineapple
3 tbsp. cilantro, bunch, fresh, organic
1/3 c. pickles, dill, gherkin, organic
1 tbsp. lemon juice
1/2 tsp. red pepper flakes
cayenne pepper to taste
Prepare the salsa: Combine minced onions, diced pineapple, minced cilantro, minced pickles, lemon juice, cayenne pepper, and sea salt in a bowl. Refrigerate for one hour before serving.
Preheat oven to 375ºF. Pour half of the melted butter into a shallow baking dish. Arrange the salmon in the dish, and pour remaining butter on top. Bake for 8 minutes (do not turn). Serve with pan juices, and top with salsa.
