Simple salsa! This can be put on chicken, eaten with chips, or added to your eggs.
1 med. onion
2 jalapeno pepper
2 roma tomatoes
1/3 med. green bell pepper
1 clove garlic
sea salt to taste
1 tbsp. lime juice
1 c. cilantro
Chop onion, jalapeno peppers, tomatoes, and bell pepper as fine and thin as you can. You can use any chopper, blender or knife you want (I use a vita-mix on low). I chop the garlic, add sea salt, and mash it - it will get watery. If you have a garlic press, this is great. Put in a bowl and add the juice of a lime, stir. Cover and refrigerate. Serve anytime within a week. You can tweak this anyway you like - hotter, smoother, thicker, however you like it. This makes about a cup and a half. I usually double it. Enjoy!
