Pesto Roasted Brussels Sprouts

Brussels sprouts coated with pesto and roasted to make a delicious side dish.


    2 tbsp. parmesan cheese

    1/2 lbs. brussels sprouts

    2 tbsp. basil pesto


Preheat oven to 400ºF. Line a baking sheet with parchment paper.

Trim Brussels sprouts and cut in half. Combine Brussels sprouts and pesto in a bowl. Stir to coat.

Move pesto-coated Brussels sprouts to the baking sheet, and spread out into a single layer. Bake for 20-25 minutes, until sprouts are browned.

Remove from oven, sprinkle with Parmesan cheese, and cook for another 2-3 minutes.
