Personal Protein Pizza

Make it a pizza night with this gluten free, healthy, AND delicious personal pizza!


    1/4 c. almond flour

    1 egg

    2 oz. grilled chicken breast

    2 oz. goat cheese

    1 c. red bell pepper

    1/4 c. tomato sauce


Preheat oven to 425°F. Mix together egg and almond meal, pour onto a baking sheet. Spread tomato sauce on the crust, add chicken (or any other meat you want), cheese (any kind will work), and veggies (I did spinach and red peppers, but you can use any kind you want). Bake for 10-15 minutes, until crust is set and cheese is melted. Let cool. After it cools, you should be able to pick it up like a pizza and eat it.

The possibilities are endless with this recipe! You could even do a breakfast pizza with scrambled eggs and bacon. Yum!

Need more protein? Use 3 ounces of meat instead of 2! Need more carbs? Add some more veggies!
