For all of you chocolate lovers out there who are feeling a little deprived... here's the perfect solution! This cake is absolutely delicious! It really gets rid of that occasional chocolate craving, and I personally like it much better than regular cake!
1 tsp. vanilla extract
1 c. milk, raw or organic
1 1/2 tsp. baking soda
2 c. coconut sugar
1 c. millet flour
3/4 c. peanut butter, creamy
3/4 c. cacao powder
1 1/2 tsp. baking powder
1 tsp. sea salt
2 egg
1/2 c. coconut oil
2 tsp. vanilla extract
1 c. water
1/2 c. butter
2/3 c. cacao powder
1 1/2 c. coconut sugar
1/2 c. honey, raw
1/3 c. milk, raw or organic
FOR CAKE: Preheat oven to 350°F. Mix coconut sugar, millet flour, peanut butter, cacao powder, baking powder, baking soda, salt, milk, eggs, coconut oil, vanilla, and water together in a bowl. Pour batter into a greased pan (batter will be thin) Bake for 30-35 minutes or until wooden pick inserted in the center comes out clean. Allow cake to cool completely before frosting.
FOR FROSTING: Melt butter. Move to a bowl. Stir in coconut sugar, honey, cacao powder, milk, and vanilla. Set in fridge and allow it to firm up a little, approximately 10-15 minutes. Remove from fridge and stir - it should have the same consistency and appearance as regular frosting. After cake is completely cooled, frost, and enjoy!
*NOTE: This makes a very chocolate-y cake, for those of you who are not a big fan of dark chocolate, I recommend using less cacao powder.
