I make this every year at Easter. So rich! Everyone loves it.
2 tbsp. butter
1 c. ricotta cheese
1 1/3 c. sharp cheddar cheese
4 tbsp. fresh chives
10 oz. frozen cauliflower
1 c. pecans
black pepper to taste
sea salt to taste
Preheat oven to 350°F. Grease a casserole dish by rubbing with a little butter and garlic.
Melt 2 tablespoons of butter in a skillet until slightly browning. Add ricotta, and mix well. Stir in salt and pepper, half of the shredded cheddar cheese, and chopped or minced chives. Fold in cauliflower. Pour mixture into greased casserole dish, sprinkle with remaining cheese and chopped pecans. Bake 15-20 minutes.
