Tastes like you're getting in trouble but perfectly legal.
2 pce. ham
4 oz. cheese, any type
sea salt & black pepper to taste
4 chicken thigh, skinless
4 oz. pecans
1/4 c. dijon mustard
Preheat oven to 350°F.
Pat chicken thighs dry and set aside. Put mustard in small bowl. Put finely chopped pecans in small tray for rolling the chicken in. Cut ham slices in half. Prepare cooking string to wrap chicken in (one string for each piece). Brush inside of chicken with mustard; add ham slice; roll and secure with string; brush with mustard; roll in pecans; put on cooking tray; lay slices of thinly sliced cheese over top. Repeat until all chicken is coated. Bake in the oven for 20 - 25 minutes depending on how big the thighs are. Serve with quinoa and veggie. Enjoy!!
P.S. Rolling in the pecans can be a bit messy but the flavor is so wonderful that it is well worth it.
