Peanut Butter Quinoa Protein Bars

Very filling and dense, nutty protein bars - completely flour-less and very tasty!

Ingredients

    1/3 c. white quinoa

    2/3 c. water

    8 date

    1/2 c. almonds

    1/3 c. peanut butter, creamy

Directions

Place quinoa and water into saucepan and bring to a boil, then simmer approximately 15 minutes until the liquid is absorbed. Let cool at least 2 hours (may cool at room temperature or in refrigerator up to overnight).

Make sure the dates are pitted and place into a food processor and pulse until they form a ball. Remove dates and place into a bowl. Place almonds into the food processor and pulse to a fine mince (do not over process to a mill - you need the nuts to help combine the final product).

Add dates back to food processor and then add nut butter and cold quinoa to processor and pulse until all is well combined.

Scoop out into bowl and shape into 1 inch x 1 inch bars. If you desire, you can paint a thin layer of nut butter on the top and then place in fridge to set up.

These will store in airtight container in the refrigerator for about 3 or 4 days.
