These need to be eaten warm! After that first delicious serving straight out of the oven, you can either freeze the balls and pop a few in the oven whenever it's on, until they're warm and gooey again.
1 1/4 c. cooked chickpeas
2 tsp. vanilla extract
10 tbsp. peanut butter, creamy
1/4 c. honey, raw
1 tsp. baking powder
1 pinch sea salt
1/2 c. chocolate chips
Preheat oven to 350°F. Line a large baking sheet with parchment paper.
Combine all the ingredients, except for the chocolate chips, in a food processor and process until fully combined and very smooth.
Transfer the mixture to a mixing bowl and stir in the chocolate chips. The mixture will be very thick and sticky.
With wet hands, form 1 1/2" balls and place them on the parchment paper. If you want them to look more like normal cookies, press down slightly on the balls. They don't do much rising. Bake for about 10 minutes. Enjoy!
NOTE: It is important that you use natural peanut butter without additives; otherwise the cookies will be too oily.
