Peach Cobbler

My family loves homemade peach cobbler, so this is my BD-friendly version.

Ingredients

    6 lrg. peach

    2 c. water

    2 c. coconut sugar

    1 tsp. cinnamon

    1/2 tsp. nutmeg

    1/2 c. coconut oil

    3/4 tsp. sea salt

    1 egg

    2 1/2 tbsp. water

    1/2 tbsp. apple cider vinegar

    1/2 c. coconut oil

    1 1/2 c. spelt flour

Directions

In a sauce pan combine 2 cups of water, 1/2 cup of coconut oil, coconut sugar, cinnamon, and nutmeg. Heat until boiling and then simmer for 10 minutes. Let cool.

Combine the spelt flour and salt in a large bowl. Cut in 1/2 cup of coconut oil until incorporated. Combine 2 1/2 tablespoons of water, egg, and apple cider vinegar in a small bowl. Make a well in the flour and pour in egg mixture. Stir gently until a dough ball forms. Place dough on a well-floured surface and roll out into 1/4-inch thickness. Cut dough into 1/2-inch wide strips.

Place half the dough strips on the bottom of a 9 x 13 baking dish. Bake at 375ºF for 10 minutes. Take out pan and place fresh peach slices on top of dough. Pour the cooled cinnamon liquid over the peaches. Place the remaining dough strips on top. Bake uncovered at 350ºF for 45-50 minutes.
