Delicious creamy pesto sauce over a variety of steamed vegetables and rice pasta.
1/4 c. extra virgin olive oil
4 clove garlic
1 tsp. fresh basil
1 tsp. fresh oregano
1 canned coconut milk
1 pkg. brown rice penne pasta
2 c. carrot
2 c. zucchini
1/2 head cauliflower
1 c. walnuts
4 c. spinach
1 c. parmesan cheese
3/4 c. gruyere cheese
1) Cook pasta per directions. 2) Steam julienned carrots, zucchini, and cauliflower approx 7 minutes. 3) Combine half of the ingredients from spinach through coconut milk and blend in a food processor. 5) Remove to a container and repeat with second half of spinach through coconut milk ingredients. 6) Combine pasta, vegetables, and sauce.
