Parsley Meatballs

Quick and easy meatball recipe.


    3/4 lbs. beef, grass-fed or pastured, organic

    1/3 ground flax seeds

    1/3 c. fresh parsley

    1/3 c. shallots

    3 tbsp. parmesan cheese

    2 tbsp. milk, raw or organic

    1 egg

    1/4 tsp. sea salt

    1/4 tsp. black pepper


Mix all the above into a med mixing bowl. Shape into 32 meatballs. I use a heaping teaspoon measuring spoon - dip in water occasionally.

Place the meatballs on a cookie sheet or shallow pan - brush with oil if not non stick. Bake in preheated 400 degree oven for 8 to 10 mins.

can be served plain over rice. Or serve with your favorite tomato sauce or pesto sauce. Also can be used for a meatball open faced sub.
