My family loves this moist fish with the yummy crusty top of goodness! Hubby and Kid tested many times! :-)
16 oz. whitefish
1/4 c. milk, raw or organic
1 egg
1 tbsp. lemon juice
2 tsp. dijon mustard
sea salt & black pepper to taste
1 c. extra virgin olive oil
1/4 c. parmesan cheese
1 tsp. dried parsley
1 tsp. chili seasoning
1/4 tsp. black pepper
sea salt to taste
Preheat your oven to 350°F. Lightly grease an 8x8 baking dish. Dip fish pieces into milk. Place fish in baking dish.
Choose any white fish that you like. I usually just get what is at a good price when I go shopping
In a small bowl, combine mayo (recipe below), Parmesan cheese, parsley flakes, chili seasoning, pepper and salt. If there is any milk left over you may add this, too. Stir well to blend.
Evenly spread the Parmesan cheese mixture over the top of each of the fish pieces. Cover and bake for 15 minutes. Uncover and continue baking for 10 minutes, or until the fish flakes easily.

My husband and kids love this! Fish isn't their Favorite meal, but this they love each and every time I've made it over the years. Matter of fact the kids love it so much that I've caught them picking at the yummy crunchy stuff on top before we've even sat down to dinner. lol I hope that you'll enjoy it, too! :)
Spice it up however you'd like. Sometimes I add some paprika and/or onion and I always have some wedges of lemon to squirt over the fish.
Directions for Homemade Mayonnaise: In a blender or food processor, process the egg, lemon juice, mustard, salt and pepper until well combined. While the motor is running, pour the oil in a slow, thin, steady stream and process until the mixture is thick and creamy. *Take your time with this recipe. If you try and rush it, it won’t come out right. **Use only 1/4 cup of mayonnaise in this recipe.
