A tasty chicken and broccoli dish!
1/2 lbs. chicken breast
3 c. broccoli
1 tbsp. avocado oil
1/4 tsp. sea salt
1/2 tsp. garlic powder
1/4 c. parmesan cheese
2 clove garlic
1/4 tsp. dried parsley
Preheat oven to 425ºF. Line a baking sheet with parchment paper.
Place chicken on the baking sheet. Arrange broccoli florets around the chicken. Drizzle broccoli with avocado oil, and sprinkle with sea salt and garlic powder. Bake for 25 minutes, until chicken is cooked through (internal temperature is 165ºF). Remove from oven.
Combine grated parmesan cheese, minced garlic, and parsley in a small bowl. Top cooked chicken with parmesan garlic mixture. (Feel free to sprinkle any extra mixture over broccoli.) Return baking sheet to oven, and broil for 3 minutes.
Remove from oven, and serve warm.
