When I first saw this recipe at a restaurant I went to I was like, "papaya omelet?!...what!". I ordered it and it was surprisingly pretty good. I tried looking for the exact recipe online but I found nothing. So I just had to come up with my own healthier version of the recipe :)
1 whole egg
2 egg white
1/3 c. cottage cheese
1/2 c. papaya, fresh, organic
1 tbsp. Greek yogurt
sea salt to taste
1 slc. turkey bacon
1.) Heat a tiny bit of coconut oil in a pan over medium heat. Add bacon so it can turn a bit crunchy ;) . Meanwhile move to next step.
2.) Add the 1 egg, 2 egg whites, and 1 Tablespoon of Greek yogurt to your blender (or you can hand whisk) and blend until little bubbles start to appear in the mixture (about 1 minute or a little less).
3.) Add egg and Greek yogurt mixture to pan and cover. Let it cook on medium heat for about 3-4 minutes each side.
4.) Transfer the omelet to a plate and add the papaya on top of the omelet and top it with the cottage cheese. Fold the omelet in half like a taco and garnish with a little cottage cheese on top to make it look high class restaurant style ;), and if you want to make it even more presentable add a small piece of parsley on the side :)
