Quick and easy pan-fried coconut shrimp.
12 shrimp
1 egg white
1 tbsp. water
1 c. coconut
1 tbsp. coconut oil
Using 12 fresh, jumbo (peeled and de-veined) shrimp, coat with a mixture of egg white and cold water whisked until frothy, followed by fresh coconut. I put the coconut on a plate and press the shrimp into the coconut on both sides until well coated. Pan fry in hot pan in coconut oil until brown. Remove shrimp to plate with paper towel to absorb excess oil. Enjoy!
