Delicious paleo breakfast of a turkey and veggie scramble with a slice of satisfying guilt free paleo coconut bread. ( http://www.julianbakery.com )
1/2 avocado
1 pinch seasoning or spices of your liking
1/2 tbsp. coconut oil
3 lrg. egg
1 slc. sprouted whole grain bread
1 slc. turkey bacon
1/4 c. zucchini
1/8 c. tomato
1/4 white onion
1/4 yellow bell pepper
1.Cook 1 slice of turkey bacon or ground turkey in frying pan over medium heat until fully cooked. 2.Also, add ½ tablespoon coconut oil to another frying pan and brown coconut paleo bread on both sides. 3.At same time, heat ½ tablespoon of coconut oil in a separate frying pan over medium heat. Add veggies (less the tomatoes) 4.Sauté the veggies for 3 minutes or so. 5.In a small mixing bowl, whisk the eggs. 6.Pour the eggs over the veggies and stir frequently until fully scrambled. 7.Dice fully cooked bacon or browned ground turkey and add to veggies in pan. 8.After plating, top with sliced avocado and tomatoes. 9.Season with a pinch of sea salt and black pepper.
