Can't go wrong with pumpkin!
2 c. almond flour
1/2 tsp. sea salt
1/2 tsp. baking soda
1 tbsp. pumpkin pie spice
1/2 c. pumpkin puree, canned
1 sml. banana
1/4 c. maple syrup
1 tbsp. vanilla extract
1/3 c. coconut oil
Preheat oven to 350ºF. Line a baking sheet with parchment paper.
In a large bowl, whisk together almond flour, baking soda, salt, and pumpkin pie spice. In a small bowl, mix together pumpkin puree, mashed banana, maple syrup, and vanilla extract. Mix wet ingredients into dry ingredients. Stir until well combined. Add melted coconut oil. Stir to combine.
Drop spoonfuls of batter onto prepared baking sheet. Sprinkle tops of cookies with a little pumpkin pie spice or cinnamon. Bake cookies for 25-30 minutes, or until golden.
