Pretty yummy variation on the traditional pancake, and super easy to make.
1 egg
1 banana
1 tbsp. almond butter
1 tsp. coconut oil
Mash and mix ingredients together, then fry with coconut oil on low heat (covering the pan also helps) for about 5 minutes on each side. Top with honey or pure maple syrup, or more almond butter.
Variations: Add chopped walnuts, pecans, cashews Add raisins, dried cranberries, blueberries or cherries Add chia seeds or flax seeds Experiment with different nut butters
