Paleo Cupcakes with Chocolate Frosting

These cupcakes are out-of-this world delicious... a wonderful and sinless dessert!

Ingredients

    6 egg

    1/2 c. coconut flour

    1/2 c. coconut oil

    1/2 c. honey, raw

    1 tbsp. vanilla extract

    1 tsp. sea salt

    1/4 tsp. baking soda

    1 c. chocolate

    1/2 c. coconut oil

    2 tbsp. honey, raw

    1 tbsp. vanilla extract

    1 pinch sea salt

Directions

MAKE THE CAKE: Preheat oven to 350°F. Combine coconut flour, sea salt, and baking soda in a large bowl; stir to mix. Combine eggs, coconut oil, honey, and vanilla in a medium bowl; stir to mix. Pour wet ingredients into dry ingredients in large bowl. Use a hand mixer to make a smooth yellow cupcake batter. Pour batter into well-oiled cupcake tins. Bake for 20 minutes. Remove and cool completely.

MAKE THE FROSTING: In a medium sauce pan, combine and melt chocolate, coconut oil, vanilla, salt, and honey. Stir constantly. Transfer to a bowl and place in freezer for 10 minutes to cool and thicken. Pour chocolate into food processor or blender and whip.
