Super healthy Hungarian/Croatian crepes with sweet cottage cheese filling!


    4 egg

    2 c. milk, raw or organic

    2 tbsp. honey, raw

    1 tsp. sea salt

    24 oz. cottage cheese

    2 tbsp. vanilla extract

    2 tbsp. coconut oil

    1 c. brown rice flour

    1 c. coconut flour

    1 egg

    2 tbsp. honey, raw


1 Serving is 2-3 Crepes

Preheat oven to 325°F.

To make crepe mix: In a large mixing bowl, combine 4 beaten eggs, milk, and 2 tablespoons honey. Combine coconut flour and sea salt in a separate bowl. Slowly add dry ingredients to wet ingredients, mixing well. Once fully combined, mix in rice flour.

Heat a small amount of coconut oil in pan on medium-high (do this for every other crepe). Coat pan with a thin layer of batter, and cook until cooked through. If you prefer, you can brown the other side as well. Makes 8-12 crepes. Crepes should be thin and easy to roll. NOTE: These are for SWEET crepes. If you prefer to fill your crepes with more savory ingredients, you can leave out the honey!

To make filling: Combine cottage cheese with 1 beaten egg, vanilla, and 2 tablespoons honey.

Spread a thin layer of filling over each crepe and roll tightly so it looks like the picture.

Layer rolled palascintas in an oven-safe baking dish (it is okay to place on top of each other if needed) and bake for 20 minutes. When they come out of the oven, top with butter and whatever topping you would like, and enjoy! I eat mine plain, but honey, pure maple syrup, and fruit, are delicious, too!
