Oven Roasted Chicken Thighs

A simple, quick way to cook chicken thighs. Easy recipe for new cooks.

Ingredients

    6 chicken thigh, skinless

    1/4 c. extra virgin olive oil

    1 tsp. seasoning or spices of your liking

Directions

Set oven temperature to 375°F (190°C). Pour olive oil into a bowl and add spices and stir until spices are evenly distributed through the oil. Dip chicken in oil mixture until evenly coated and place on baking sheet. Bake in oven for 30 minutes turning the meat over halfway through cooking time. Using a meat thermometer, make sure the temperature is at least 165°F (74°C).

Make sure the ingredients are as healthy as you can afford. I found the chicken at the grocery store that was labeled as hormone and antibiotic free. So, even though it was not labeled organic it is at least a better choice. I used Mrs. Dash Lemon Pepper and some celtic sea salt for my spices. Use whatever your favorite spices are, just check ingredients for added sugar.

I did not list servings. One ounce of chicken is equal to 1 Protein so it all depends on how much chicken you used and what your protein servings are. I just used 6 chicken thighs because that is what I used last night. This would be great to make a lot and have leftovers for lunches/salads.

I made this last night and there were no leftovers. My youngest said it was "juicy" just the way he liked it. He's 21 and still very much into junk food so I try to get good food in him when I can.

If someone wants to tell me what the temps would be in Celsius I will post them in the recipe.

I served broccoli topped with organic butter as a side dish.
