Organic Sprouted Beans with Ground Beef

This is another dish I make in big amounts and we eat throughout the week at lunch and dinner... The picture I posted is actually the real picture of how the "sprouted bean trio" I use in this recipe looks like...It is made up of organic lentils, adzuki and mung beans; gluten-free. I found it in our wholesale store; they even started bringing more and more organic foods. We gave it a try and it was very good.

Ingredients

    3 c. beans, mixed, your favorite, organic

    2 tbsp. coconut oil

    1 med. onion

    1 dsh. sea salt

    1 dsh. black pepper

    1 lbs. ground beef

    2 c. diced tomatoes, fresh

Directions

In a medium/large pot, melt the coconut oil, and add the diced onions. Season with sea salt and pepper as desired. Continue to saute until onions are about to get golden (not quite though). Then add the diced tomatoes and continue to saute for a couple more minutes. Then add organic ground beef and continue to stir/saute for another 5-7 minutes until beef is no longer pink. Stir until all ingredients in the pot are mingled thoroughly. Add in 2 cups of beans (washed) and stir and add a cup of boiled water, after which, add the last cup of beans. Adjust salt and pepper as you desire, add another cup of boiled water, and stir. Let it cook for 10-15 minutes in medium heat, occasionally stirring. And enjoy!
