Orange Roughy in Scallion and Ginger Sauce

    2/3 c. sherry, cooking

    1/2 c. wheat-free soy sauce

    1/8 c. extra virgin olive oil

    1/2 c. green onion

    2 tsp. fresh ginger

    2 tsp. garlic

    4 orange roughy


Preheat the oven to 400°F (205 degrees C). Mix the sherry, soy sauce, sesame oil, onion, ginger, and garlic in a small bowl. Place the fish fillets in an ovenproof casserole dish. Drizzle the marinade over the fish and bake for 12 minutes or until the fish flakes easily.
