Oopsies "Bread"

I found this as a post by a friend on Facebook. Decided to modify it (and substitute some ingredients) and try it as a BD-friendly recipe. It is not bread, but something with a little substance and bread-like that can be substituted for buns or even wrap-type use. Maybe with experimenting you can even improve it. My non-BD husband even liked them. I have no idea why they're called Oopsies.

Ingredients

    3 egg

    1/2 c. Greek yogurt

    1 pinch sea salt

    1/2 tsp. baking powder

    2 tsp. brown rice flour

    1 sesame seeds

Directions

Preheat oven to 300 degrees.

Separate the eggs, putting egg whites in one bowl and egg yolks in another bowl. Whip the egg whites together with the salt until very stiff. You should be able to turn the bowl over without the egg whites moving.

Mix the egg yolks and greek yogurt well. Add baking powder and rice flour. (The original recipe called for optional psyllium seed husks which I didn't have so I added the rice flour. It says the baking powder is also optional but makes the Oopsies more bread-like.)

Gently fold the egg whites into the egg yolk mixture - try to keep the air in the egg whites.

Put 6 large spoonfuls or globs on a baking sheet. I put parchment paper on the pan, but the Oopsies were difficult to get off the paper, so maybe spraying the pan with olive oil would be better.

You can also add seeds on them before baking, if you like. (i.e. poppy, sesame or sunflower seeds). I added sesame seeds.

Bake in the middle of the oven for about 25 to 30 minutes - until they turn golden.
