yummy,chunky, filling soup
1 carrot
1 sml. spinach
1 onion
3 med. tomato
1 green bell pepper
1/2 c. white quinoa
1 tsp. ground cumin
1 tsp. fresh oregano
1 tsp. curry powder
1/8 tsp. cayenne pepper
1 tsp. sea salt
1 sweet potato
4 c. vegetable broth
1 c. canned kidney beans
1 c. canned pinto beans
1 stlk. celery stalk, fresh, organic
Combine ingredients with the 4 cups of vegetable broth,bring to a simmer, cook until potatoes and beans are tender,( if using canned beans read the label and make sure no sugar is added) added water along the way if necessary.
Vegetarians can count this as 1 protein and 1 carb per serving.
