Old-Fashioned Buckwheat Pancakes

Pancakes like Grandmother made. Buckwheat is gluten-free and is Beyond Diet approved. This recipe makes 8 4-inch pancakes (2 hearty, healthy servings).

Ingredients

    2 egg

    1 1/4 c. buttermilk

    1/2 tsp. baking soda

    1 c. buckwheat flour

    2 tbsp. coconut oil

    1 tsp. baking powder

    1/2 tsp. sea salt

    1/4 tsp. vanilla extract

    3/4 c. blueberries

Directions

In a medium bowl, beat eggs. Add in buttermilk, baking soda, coconut oil, and vanilla. Beat in buckwheat flour, baking powder, and sea salt. Beat until smooth. If using blueberries, add last.

Heat griddle or large skillet, grease with coconut oil. Pour 1/4 cup pancake batter onto griddle to make 4-inch pancakes. Cook over medium heat, turning to cook second sides when pancake surfaces are bubbly (1-2 minutes per side). Remove to a warm platter and cook rest of pancakes.

These can be frozen and reheated in a toaster for a quick breakfast or snack later.
