Quick and easy
1/2 c. coconut sugar
1/4 c. honey, raw
2 egg
1 tsp. vanilla extract
1 c. spelt flour
1 tsp. baking soda
1 tsp. cinnamon
3 c. old-fashioned oats
1 c. raisins
6 tbsp. coconut oil
1/2 c. butter
Preheat oven to 350ºF. Line a baking sheet with parchment paper.
Combine softened butter, softened coconut oil, coconut sugar, and honey in the bowl of a mixer (or use a hand mixer), and blend until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, and cinnamon; mix well. Add oats and raisins, mix well. Bake 15-20 minutes or until light brown.
