Easy to make and delicious!
3 egg
1 c. old-fashioned oats
1 c. cottage cheese
stevia to taste
1 tsp. cinnamon
1 tsp. vanilla extract
In a blender, blend all ingredients until smooth. Heat a little coconut oil in a griddle over medium-low heat. For each pancake, pour 1/4 cup batter onto griddle. Flip when they start to bubble. Cook until golden brown. Makes about 9 pancakes.
