Oatmeal Cookies with Raisins

Delicious cookies with a sweet touch and it's great when paired up with a side of Greek yogurt for a complete breakfast!


    1 c. old-fashioned oats

    1 med. banana

    1/4 c. raisins

    2 tbsp. canned coconut milk

    1 c. applesauce

    1 tsp. vanilla extract

    1 tsp. cinnamon


Preheat oven to 350ºF (175°C). Line a baking sheet with parchment paper.

Mash banana in a large bowl (ripe bananas are better). Add applesauce, coconut milk, vanilla, and cinnamon. Stir to mix well. Add oats and raisins, and stir until everything is evenly distributed.

Drop batter on baking sheet by the spoonful (~12 cookies), and bake for 20 minutes. Let cool a bit before enjoying or storing in an airtight container. You can freeze them to have them ready everyday.

One serving is 2 cookies.
