Love these for when I want something sweet that won't blow my entire plan.
2/3 c. almonds
2/3 c. walnuts
2/3 c. oats, whole, dry, organic
1/4 tsp. cinnamon
1/8 tsp. sea salt
1/4 c. maple syrup
2 tsp. vanilla extract
3 tbsp. chocolate chips
Process nuts, oats, cinnamon and sea salt into fine meal in food processor (my Ninja Express works great for this - only $20 at Walmart!). Add maple syrup and vanilla, and process to combine. Add chips and pulse to combine. Roll into balls and put in freezer for 2 hours. Store in freezer in tightly covered container. Tastes a lot like eating oatmeal cookie dough without all the sugar.
